Gluten Free Vegan Peanut Butter Waffles
Makes 8-10 Big Waffles
INGREDIENTS:
- 2 Flax Eggs (2 tablespoons flax meal + 5 tablespoons water)
- 2 Ripe Bananas
- 1/2 cup Peanut Butter (no added salt or sugar if possible!)
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1 3/4 cup Unsweetened Almond or Soy Milk
- 2 tablespoons Date Syrup (or sub maple syrup!)
- 1 teaspoon Vanilla
- 2.5 cups Gluten Free Flour
- Fruit drizzle or chocolate syrup if desired
INSTRUCTIONS:
- Make flax eggs in a large bowl and let sit 5-7 minutes until mixture begins to gel up.
- Add peeled bananas and peanut butter to bowl and mash together.
- Add baking powder and salt and continue to mash until blended.
- Add vegan milk, date syrup, and vanilla and stir until combined.
- Add flour and mix until just combined.
- Spray waffle iron if needed with oil. Pour approximately 1/2-3/4 cup onto a preheated waffle iron and cook until brown and crispy on outside (approximately 5-6 minutes).
- Place waffles on cookie sheet and put in lightly warm oven to maintain temperature until ready to eat.
- Top with fruit drizzle or chocolate syrup and enjoy!
Note: I used cherry jam I made last summer and mixed it with a little water to make it syrupy and pour over the top. It’s an easy way to make a fruit syrup!
